The experience
A day in the mountains where jamón ibérico is made
A full day north-west of Seville, in the mountain villages that give Spain its most celebrated ham — travelled in a private car with your own driver.
Iberian ham is the jewel of Spanish gastronomy, and the Sierra de Aracena is where the finest of it is made. We take you up into the mountains towards the Portuguese border, to a family-run farm where the pigs roam freely among the holm oaks and where you see for yourself how much those trees matter to the flavour.
From there we continue to Jabugo, a name that means something to every Spaniard, for a guided visit to one of the great producers. An expert walks you through the whole process, and you will not forget the sight of thousands of hams hanging in the mountain air, curing slowly for up to three years. The visit closes with a tasting of the ham and a glass of the finest fino or manzanilla.
Lunch is in the town of Aracena, at a restaurant we have known since 1995 and whose owners are old friends. You sit down and the kitchen decides: asparagus, artichokes, wild mushrooms, mountain cheese, acorn-fed pork, whatever the season is giving, with good Spanish wine and a dessert to finish. Afterwards there is usually time to walk up to the castle on the hill before the drive home.
The day is entirely yours. Timings, the pace and the lunch can all be adjusted, a licensed guide from Seville can join you (550 € full day, 405 € half day), and if you are a larger party we arrange the transport to match.

Where we collect you
Your hotel in Seville, around 09:30
Your private driver collects you at your accommodation, or at a nearby meeting point if the street cannot be reached by car. You are back in Seville around 18:00, and the start time is adjusted to your party.
